How Wooden Cutlery Is Finished: Drying, Polishing, Sorting and Sterilisation

How wooden cutlery becomes smooth, clean and ready for food service.

After the birch wood has been shaped into spoons, forks or knives, it may already look like cutlery, but it still needs to go through finishing. This is where the pieces become smoother, cleaner, more stable and more suitable for food service use.

For a restaurant, cafe, hotel or caterer, finishing may not be visible at first glance. Your guest does not see the drying, polishing, sorting or sterilisation. But they can feel the result immediately.

They feel it when a spoon is smooth on the lips. They notice it when a fork does not feel rough in the hand. They trust it when the cutlery looks clean, consistent and ready to use.

Finishing is the stage that turns shaped wood into a product your customer can comfortably use with food.

Why does the wooden cutlery need finishing?

Wood is a natural material. That is part of its value, but it also means every piece is slightly different.

Even when the right birch is sourced and the shaping process is carefully controlled, small differences can still appear. Some pieces may show knots, darker areas, uneven texture, cracks or weak sections. Some may bend during production. Some may not form perfectly. A piece of wooden cutlery must be smooth enough for food contact, strong enough for normal use and clean enough to meet sanitary expectations. If the finishing is not done properly, the final product may look unfinished or feel uncomfortable.

For food service businesses, this is important because cutlery is part of the meal experience. It touches the food. It touches the customer’s hand. It affects how professional the whole order feels.

Drying the shaped pieces

One of the most important finishing steps is drying.

After the cutlery pieces are cut from veneer, they still contain moisture. This moisture has to be reduced to the correct level. If the wood remains too wet, it may be unstable. If it becomes too dry too quickly, it may crack, bend or change shape.

The pieces are dried in a large drying tunnel. A conveyor belt carries the cutlery slowly through heated sections, allowing the moisture to reduce in a controlled way.

This process is important because drying gives the wooden cutlery more stability. It helps the product hold its shape and prepares it for polishing and further inspection.

Drying is not only about removing water. It is also about finding the right balance.

A properly dried spoon feels firmer. A properly dried fork is more stable. A properly dried knife is less likely to bend or feel weak during use.

That balance is part of what makes the final product reliable.

Polishing for a smoother surface

After drying, the cutlery goes through polishing.

The pieces are placed into large rotating drums. As the drum turns, the cutlery pieces move gently against one another. This movement helps smooth the edges and surfaces.

This process helps remove small splinters, rough areas and sharp edges that may remain after cutting and shaping.

Polishing is one of the reasons high quality wooden cutlery feels different from poor quality wooden cutlery. A spoon may look simple, but if the edge feels rough or the surface feels unfinished, the customer will notice.

Good polishing helps the cutlery feel softer, smoother and more comfortable to use.

For a caterer serving guests at an event, or a takeaway business sending meals out every day, this detail is important. The customer may not think about how the cutlery was polished, but they will notice if it feels rough.

The first sorting stage

After polishing, the cutlery goes through sorting.

This is the first major quality control stage. Each piece is checked to make sure it meets the required standard.

Natural veneer can still contain defects. There may be knots, bark marks, dark spots, holes, cracks or uneven texture. Sometimes, if the veneer has a hole or weak area, the cutting machine may create an incomplete piece. A spoon may come out with a missing part. A fork may not be fully formed. A piece may be warped, broken or visibly defective.

These pieces are removed from the production line. Serious defects cannot be allowed into food service products. A customer should not receive a spoon with bark marks, a fork with a broken section or a knife with a crack.

The goal is simple. Only pieces that are suitable for further processing should continue.

Removing defective pieces

Some rejected pieces are only slightly imperfect. Others are very poor quality.

Pieces with serious defects are downgraded and removed from food service production. They are not used again for customer products. The standard cannot only be based on whether the piece looks like a spoon, fork or knife. It must also be clean, safe, smooth and reliable enough for real use.

A dark knot may seem small in the raw material, but it can become a weak point in the final piece. A tiny crack may become larger after handling. A warped spoon may not feel comfortable to use.

Quality control helps stop these problems before the product reaches the customer.

Forming can reveal new defects

Even after the first sorting stage, the cutlery may still need further checking.

During heat forming, pressure and heat are used to create the final shape. For example, a flat spoon piece is pressed into a heated mould to create the curved bowl.

This process gives the spoon its function, but it can also reveal hidden weaknesses in the wood. Some pieces may crack at the back. Some may form unevenly. Some may bend in the wrong direction. Knots or weak areas may become more visible after pressure is applied.

That is why sorting has to happen more than once.

The second sorting stage

After forming, we check the cutlery again.

This second quality control stage removes pieces that did not form correctly. A spoon bowl may be too uneven. A fork may have a weak section. A knife may not have the right shape. Some pieces may show cracks, rough areas or visible defects after forming.

Customers expect the same quality across the whole batch.

Finishing helps protect that consistency.

Sterilisation before packing

After the cutlery has been dried, polished and sorted, it goes through sterilisation.

This step helps make sure the product meets sanitary standards before packaging.

During production, the cutlery passes through several machines and inspection stages. It may be handled during sorting and quality control. Sterilisation helps make sure the finished cutlery is clean before it is packed. 

The final step before packing

By the end of the finishing stage, the wooden cutlery has gone through drying, polishing, repeated sorting and sterilisation.

It has been checked for major defects. It has been smoothed for comfort. It has been cleaned for food service use.

Now it is almost ready for the customer.

But before it can leave the factory, it must be packed properly. Packaging is not only about placing cutlery into a bag or box. It is about protecting the finished product so it arrives clean, counted, secure and ready to use.
